A creative, tasty use for leftover turkey meat (or ground turkey meat if you prefer). This turkey taco recipe uses a combination of mouth-watering spices and fresh vegetables. All of the ingredients are cooked with the turkey meat to create a filling that tastes amazing. Not to mention how healthy these turkey tacos are! The cooked taco filling is then served on warmed up corn shells and smothered with shredded cheddar cheese. Fresh, chopped cilantro tops off this dish to make it looks as good as it tastes!

Turn your leftover turkey meat into deliciously seasoned tacos with this easy recipe. Filling has an excellent flavor with a bit of spice to it.
  • 1 lb turkey meat (either ground or shredded from a whole turkey, aka “leftovers”, will work)
  • 2 tbsp extra virgin olive oil
  • 2 cloves of fresh garlic, finely chopped
  • 1 jalapeno pepper, finely chopped (remove seeds if you want LESS spiciness)
  • 1/2 onion (white or yellow), chopped
  • 1 green pepper, chopped and seeded
  • 1/2 cup water or broth (chicken or turkey broth)
  • 1/4 tsp cayenne pepper or chili pepper
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1 teaspoons ground cumin
  • 1 teaspoon sea salt
  • 1 fresh tomato, chopped (topping)
  • fresh cilantro, chopped (topping)
  • 1 cup cheddar cheese, shredded (topping)
  1. To begin, chop up your veggetable ingredients as described.
  2. Heat up a frying pan over medium heat, add olive oil to the pan once its warm
  3. Mix the chopped up garlic, onion, green pepper, and jalapeno pepper to the pan.
  4. Turn up heat to medium-high and cook until garlic is brown and onion and peppers are soft (~3 minutes)
  5. Next, add the turkey to the frying pan. If using ground turkey, break up using the spatula as you would with ground beef. If its shredded turkey meat, make sure pieces are broken up into about 1 inch chunks.
  6. Once turkey meat is fully cooked (ground turkey will take a bit longer than shredded meat since it hasn’t already been cooked), add 1/2 cup of water or broth (chicken or turkey) to the frying pan and slowly stir in all the spices (cayenne pepper, onion powder, paprika, ground cumin and sea salt)
  7. Cook turkey taco filling mixture in the pan until all the liquid boils off
  8. In a separate pan, warm up corn taco shells
  9. Add filling to the warm shells and smother with shredded cheddar cheese, tomatoes and cilantro
  10. Enjoy your tasty turkey tacos!


Making these turkey tacos is one of my favorite after-Thanksgiving traditions!  It’s a great way to make use of leftover turkey meat, and the tacos taste great.  If you want to really make use of the leftovers, make sure to double this recipe so you end up with double the filling.  You can save it and use it over the next few days as a topping for nachos or an extra filling for burritos.
