A healthy, shrimp taco salad recipe with a spicy twist. The shrimp are seared in a tasty blend of taco seasoning, then served over a bed of fresh greens and chopped tomatoes. I usually serve this taco shrimp salad with a side of cheese and some tortilla chips.

It's easy to make this salad a bit spicier if you want by increasing the amount of chili powder and cayenne pepper you use when searing the shrimp. Some extra spice on the shrimp will give this salad loads of flavor without the need for much dressing. It's a great way to cut down on calories if your diet calls for it (although this recipe is VERY healthy to begin with). Finally, serve with a slice of fresh lemon to bring all the flavor together! Healthy salad with a spicy twist. The taco seasoned seared shrimp, cheese and tortilla chips spice up this feel-good meal with a bite.
Ingredients
  • 1 lb uncooked large shrimp
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon oregano
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 cup olive oil, plus
  • 3 tablespoons olive oil
  • 1 small onion, minced
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons red bell peppers, minced
  • 6 cloves garlic, minced
  • 1 Tablespoon fresh parsley, chopped
  • 1 Tablespoon fresh tarragon, chopped
  • 1 Tablespoon fresh dill, chopped
  • 4 teaspoons sugar
  • 1 package mixed salad greens
  • 1 tomato, chopped
  • 1 can black beans
  • 2 cups sharp cheddar cheese, grated
  • 1 Cup Tortilla Chips
Instructions
  1. In a medium sized bowl, mix the chili powder, cumin, coriander, oregano, cayenne pepper, and salt
  2. Peel shrimp and remove tails and add to bowl
  3. Add ½ of the oil and coat the shrimp well
  4. Saute shrimp in a medium saute pan on high heat until pink
  5. In a large bowl add the mixed salad greens, diced tomato, black beans, and shrimp
  6. In a medium sized bowl, add remaining oil, apple cider vinegar, parsley, tarragon, dill, minced onion, pepper, garlic and sugar
  7. Mix well and pour over salad
  8. Add cheese and tortilla chips
  9. Enjoy!
