Slow cooked juicy pulled beef tacos. If you own a crock pot, this is easy to start in the morning, and by dinner time, you have a wholesome meal that could feed an army.
  • 1 (4 pound) frozen rump roast
  • 1 cup white wine
  • 2 (7.75 ounce) cans Mexican style hot tomato sauce
  • 3 tablespoons garlic, crushed
  • 2 tablespoons of apple cider vinegar
  • salt and ground black pepper
  • 1 bunch green onions, minced
  • 1 cup fresh cilantro, chopped
  • Tortillas / Taco shells
  • 2 avocados, chopped
  • 2 tomatoes, chopped
  • 1 cup sour cream, side
  • 1 head of lettuce, chopped
  • 2 cups of sharp cheddar cheese, grated
  1. Add the rump roast (fat side up), wine, tomato sauce, apple cider vinegar and garlic to the crock pot.
  2. Lock down the crock pot and cook on low for 8-10 hours. (Or high for 3-5 hours)
  3. Carefully remove the roast and pull with two forks. Remove fat as desired.
  4. Carefully pour broth from the slow cooker into a sauce pan. Bring the broth to a boil on high, add the onions, and reduce on medium heat for 5-10 minutes. Stir occasionally. Salt and pepper to taste.
  5. Place the pulled beef in crock pot on warm.
  6. Pour broth over the pulled beef and add the cilantro.
  7. Mix and serve in warm tortillas/taco shells with desired amounts of avocado, tomatoes, lettuce, sour cream and cheese.
  8. Enjoy!
